<p>The Zuppa Francescana is a mix of pearl barley, hulled peas and hulled cicerchia from Colfiorito, all grown on the Colfiorito plateau. It is a very tasty dish that can also be considered a single dish given the concentration of nutritional factors present and in particular the protein intake made up of the combination of cereals and legumes.</p>
