The milk is produced from cows fed according to a precise disciplinary which provides for the use of local forage and vegetable feed, prohibiting all ensiled forage and food of animal origin. <p>The Balsamic Vinegar of Modena "Nerello" is a condiment obtained from the elaboration of grape musts from 7 selected vines and from fine wine vinegars. Preserved by the Protected Geographical Indication, the vinegar must be aged for at least two months in fine wooden barrels for the "refined" product, or for at least three years for the product defined as "aged".
