<p>A careful blend of sauvignon blanc and sémillon, typical Bordeaux grapes, for a white that takes its name from the first owners of the Castle and whose label bears a drawing of the Chapel of San Giovanni located on the property. A wine, born with the 1997 harvest, which has always been vinified and left to mature only in steel tanks in order to accentuate its sapidity and freshness, without losing sight of the roundness typical of sémillon. Castello della Sala's Umbria Bianco IGT "Conte della Vipera" is a great white from Antinori, capable of giving great surprises even several years after bottling.</p>
<ul>
<li><strong>Features:</strong> The gustatory notes highlight a sublime wine. The <em>light yellow color</em> with greenish reflections is an indisputable sign of freshness and youth. This is followed by the olfactory component which is expressed with the <em>notes of fruit and citrus</em> which are combined with the notes of white-fleshed peach. On the palate it has character and structure, it is <em>persistent and harmonious</em>. There is also a marked acidity which allows it to reach an excellent degree of freshness.</li>
<li><strong>Pairings:</strong> Conte della Vipera should be paired with all fish-based Mediterranean dishes . It must be served chilled, at a temperature of 10° maximum 12° C in a high, wide wine glass.</li>
