<p>The artisanal fusilli are a tribute to the centuries-old tradition of the ancient art of Pisan pasta makers. the shape of the fusillo depicts the famous tower with its "walkway" to reach the top.<br /> This pasta is obtained by slowly mixing the best Italian durum wheat semolina with cold water, by means of bronze drawing which makes it rough and subsequently dried at a "traditional low temperature" (33-36°C) for about 50 hours ( depending on weather conditions).
