<p>Tuscan Helichrysum Honey is actually a multi-flower honey, embellished directly by bees, with essential oils taken from the Helichrysum flower. <p>Tuscan ivy honey is one of the most difficult to produce due to its high crystallization speed and the high percentage of water it naturally contains. Our honey has therefore been slightly dehydrated in order to preserve its peculiar organoleptic characteristics (if stored with high humidity in a few weeks, fermentation processes would be triggered which would irreparably damage its characteristics). It presents itself with a fine, homogeneous and consistent crystallization. Light in color, it gives off a slight fragrance of green, of grass, pleasantly confirmed also in the mouth. It is suggested to taste ivy honey as it is without heating it to soften it. Ivy is an evergreen, lianiform and climbing plant very common in the woods and shady uncultivated areas of Tuscany. It can grow creeping or clinging, reaching considerable heights (20-25 m) with this system. It is frequently found clinging to the walls of old abandoned ruins. Flowering occurs around mid-September, and is greatly appreciated by bees.
