<p>Il Caporale has an intense ruby red color with light garnet reflections. The nose is delicate, clean and fruity with hints of raspberry, plum, blackberry and a spicy finish. In the mouth it is fresh, despite its alcoholic note, medium fruity and easy to drink.</p> <ul> <li><strong>Method:</strong> born from a careful selection of the grapes followed by a delicate de-stemming with classic red vinification at a controlled temperature. During the fermentation phase, the must is subjected to pumping over and punching down processes which guarantee the desired extraction of the constituents present in the skins. Fermentation takes place spontaneously, i.e. without the addition of selected yeasts.
