<p>The Monlclivio Enrico Serafino is known for its powerful elegance. Thanks to the careful management of the harvest and the aging in wood, the characteristics of the territory are perfectly recognizable in the wine. MONCLIVIO is the result of the harmonious union between land, Nebbiolo and tradition. Enrico Serafino Barolo since 1878.</p> <p>The bunches are selected by hand on a vibrating table and cooled with carbonic snow to avoid oxidation and considerably reduce the use of sulphites. After destemming, the grapes are selected by hand on a second vibrating table and subjected to soft pressing. The entire process takes place without the use of augers in order to treat the grapes in the most delicate way possible.</p> <p>The must is cooled to preserve its best characteristics before fermentation in stainless steel tanks and conical oak vats at a controlled temperature. The maceration is long lasting with the délestage technique and, in part, with a submerged cap for over 28 days. <p>This Chardonnay by Hofstatter comes from those grapes grown within parcels that are characterized by a mainly marly subsoil, subject to rapid heating. After the rigorously manual <strong>harvest</strong>, the bunches are destemmed and the grapes are lightly pressed, separating the residues from the must through precipitation. The fermentations last on average no more than 15/18 days during which multiple pumping over and délestage are performed.</p> <p>Once the fermentation is complete, the tanks are drawn off and the pomace is gently pressed under the watchful eye of our cellarmen, who have handed down the trade for generations.</p>

<p>The Gewurztraminer vineyards are located in two areas: on the hills of Maso Warth, cultivated on calcareous soils with guyot systems to seek the maximum concentration of the fruit; on the alluvial cone of the Sorni, cultivated with the pergola system on clayey soils. This grape is usually harvested in the second half of September, when it gradually turns towards its characteristic pink colour.</p> <p>Persistent finish, hints of bread crust and dried fruit are perceived on the nose.</p> <p>Gewurztraminer is one of the most famous aromatic grape varieties.
