a world excellence such as the Moselle Riesling, specifically that of Dr. Fischer. It is a troken, which means that it is a still and dry white wine, without any residual sugar, or in any case with a residual sugar so low that it is not perceptible. The characteristic of Rhenish Riesling, especially cultivated along the Reno and Mosel rivers, with their tributaries, is the strong acidity, very high indeed, and the great elegance. That is, they are very lean wines, with little alcohol and very fine and elegant. Dr. Fischer's Troken is no exception, which fully responds to the typicality of the product.

Characteristics: Intense straw yellow, nose expresses beautiful and deep floral notes flanked by fruity hints of yellow peach and pineapple. A mineral trace, of chalk, opens to a decisive, elegant taste, whose acidic shoulder is well defined and which outlines its structure up to a luminous and persistent closure. In the scale that describes Riesling according to its sugar content; Trocken represents the base, it is in fact the driest wine ever, the one whose residue is between 4 and 9 grams/litre. A white characterized by a vehement acidity and at the same time by a great, profound balance, capable of expressing all the best characteristics of the Moselle thanks to an unrivaled territorial adherence.

Pairings: Also excellent as an aperitif, it is particularly versatile in finding the perfect accompaniment to food. Perfect with seafood salads, shellfish, soft cheeses, it is enhanced with risottos and light fish-based second courses.

J. Hofstätter Estate

For five generations our family has been cultivating its vineyards on both sides of the Adige valley. Located in the heart of the historic village of Termeno, our estate extends between the peaks of nearby Trentino and the steep slopes of the Saar, in the Moselle wine region, in Germany. We combine tradition, pioneering spirit, respect for nature and innovation. We love what we do: we live wine. The different terroirs and the different microclimates determine the character of our wines. For five generations we have been cultivating each vine where it can best express itself. Our own vineyards extend on both sides of the Adige valley and at the end of the Ronchi valley in Trentino. Since 2014 we have been producing our Rieslings in the Moselle, the most suitable wine-growing area in Germany in the world for this noble variety. Our vines have their roots on plateaus and hills at altitudes ranging between 250 and 850 metres. Depending on which slope they are located on, the rows are reached by fresh mountain breezes or warm south winds, by the morning or evening sun. Ours was the first South Tyrolean company to include the "Vigna" on the label, identifying the wines that come from single vineyards, in the most suitable parcels.
