<p>The Champagne Brut "Majeur" is a product of the prestigious Ayala maison. This Maison is undoubtedly characterized by a long and troubled history; today it is owned by Bollinger who has meant that, following innumerable historical vicissitudes, it could regain its initial splendor; it is no coincidence that it is one of the very few Maisons able to cover its needs using only grapes produced in its own vineyards! Champagne Brut Majeur undoubtedly owes its greatness to the peculiar <strong>assemblage</strong> in which the character of the <em>Pinot Noir</em> and the generosity of <em>Chardonnay</em> are combined with <em>Pinot Meunier</em> which is able to harmonize everything making it extremely pleasant to drink.</p> <ul> <li><strong>Method:</strong> After harvesting, fermentation and making the sparkling wine, the champagne is aged for over 30 months on its lees. It is precisely this step that makes this wine elegant, fine, lively and snappy, with fresh and fruity notes that never break a delicate balance. A name that seems created on purpose, by pure chance, for the town of Aÿ, the seat of AYALA since its creation. Curious and audacious, Edmond de AYALA has always known how to cultivate a taste for going further. Maison AYALA is animated by the spirit of excellence and adventure inspired by its founder. Pioneer in the introduction of a drier style, thanks to his intuition he launched the "dry champagne" in 1865 with a dosage of only 21 g / l. A bold choice in favor of purity, in contrast to the traditional French dosage of the time of over 150 g/l. Since its creation, the young Maison has been an essential point of reference: it is among the founding members of the Syndicat des Grandes Marques in 1882, the current Union Des Maisons de Champagne. After France, the Maison continues its expansion in England thanks to Fernand, Edmond's younger brother, which allows the brand to achieve lasting notoriety, until it obtains the Royal Warrant in 1908 after the coronation of King Edward VII. In the 1920s the Maison experienced a golden age with a production of one million bottles, which places it among the great Maisons of the time. After the war, the Maison was led by two great men of Champagne, René Chayoux and Jean-Michel Ducellier, who worked for the interprofessional committee and contributed to the development of the Appellation. To restore the status to Sleeping Beauty of Aÿ she deserves, the construction of a new cellar in 2007 allows the Maison to have a modern winemaking tool at its disposal, worthy of the qualitative ambitions of Champagne AYALA. The return of the Maison to the international scene begins with success. Since 2006, Caroline Latrive begins to immerse herself in the savoir-faire of AYALA alongside Nicolas Klym, whom she succeeds as Chef de Cave of the Maison in 2012. At the same time, Hadrien Mouflard is appointed General Manager, with the mission of accelerating the development of AYALA in France and abroad. The style of the wines asserts itself with the Chardonnay vine as the protagonist. The identity of the brand is completely rethought, with the creation of new labels inspired by the historical codes of the Maison. <p>The Champagne Extra Brut "Latitude" of the Maison Larmandier Bernier is a Blanc des Blancs made only with the <strong>precious Chardonnay grapes</strong> grown in the famous Premier Cru of Vertus. Its name underlines precisely the origin of the grapes from a single location, to highlight the particular characteristics of the terroir. It is a Champagne of great expressive purity, which well expresses the richness and aromatic intensity typical of the <strong>Vertus</strong> area. The Extra Brut "Latitude" is a Champagne that well represents the philosophy and style of the Maison Larmandier Bernier, marked by elegance and the search for an authentic link with the terroir. The estate covers a total of fifteen hectares managed under biodynamic agriculture, with parcels located in prestigious locations on the Côte des Blancs: Vertus classified as Premier Cru and Cramant, Chouilly, Oger, Avize, all classified as Grands Crus.</p> <ul> <li><strong>Procedure:</strong> After manual harvesting, the grapes are gently pressed and the must is fermented with indigenous yeasts. The base wines mature on the lees for a few months, partly in wood and partly in steel, carrying out the malolactic fermentation. Before the summer we proceed with the assembly and creation of the cuvée, choosing the best base wines of the vintage to which a percentage of 40% of reserve wines is added, to guarantee a constant continuity of taste. <p>Elegant and refined, the Brut Réserve cuvée is the champagne for all occasions. The Brut Réserve is obtained from a blend of equal parts of three Champagne vines: pinot noir, pinot meunier and chardonnay from 30 different crus. 25% of reserve wines are used to make this cuvée:</p> <ul> <li>- <strong>Pinot Noir</strong>, for its structure, body and power, comes mainly from some of the best crus from the Montagne de Reims;</li> <li>- The <strong>Pinot Meunier</strong>, due to its freshness, softness and fruitiness, comes from different crus of the Marne Valley and the Epernay region;</li> <li>- <strong>Chardonnay</strong>, due to its aromatic complexity, finesse, elegance and lightness, comes from Epernay and from some of the best crus of the Côte des Blancs.</li> </ul> <p>The <strong>grapes</strong> are pressed quickly and gently. A first decantation is carried out at the <strong>crushing center</strong>, then a second one in our cellar, cold (6°C), for 24 hours. Alcoholic <strong>fermentation</strong> takes place at a low temperature (18°C) in thermoregulated stainless steel vats where the grapes and crus are vinified separately before final blending. Malolactic fermentation is carried out on all the wines of the House. After tasting, blending and bottling, fermentation and aging take place in the cool of our cellars, <strong>33 meters deep</strong> . Each bottle is shaken by hand, in the <strong>traditional</strong> way, before <strong>disgorgement</strong> and dosage. The wines then settle for at least three months before being shipped.</p> <p>The Brut Réserve Pol Roger has a beautiful <strong>straw yellow</strong> color and an abundant and fine effervescence. The <strong>nose</strong>, powerful and engaging, initially reveals aromas of fruit (pear, mango.) and then unfolds light hints of honeysuckle and white jasmine, then continues with notes of brioche and vanilla.<br /> Behind a frank and dynamic attack, the wine offers a beautiful harmony and a pleasant freshness, while presenting a certain structure. On the <strong>palate</strong>, stewed fruit flavors (quince jelly, apricot jam) happily marry with fragrances of beeswax and acacia honey. <p>The Brut Rosé comes from a skilful blending of the three main vines of the Champagne region: Chardonnay, Meunier and Pinot Noir, belonging to various vintages. is the most famous and representative Champagne of the Maison of Mareuil-sur-Ay. A label of great finesse and expressive intensity, which is part of the circle of excellence of the Rosé type.</p> <ul> <li><strong>Process:</strong> The grapes come from vineyards in 28 municipalities in the Marne. After the soft <em>pressing</em> and the separate vinification, the vins clairs rest for a few months awaiting the creation of the definitive <strong>assembly</strong> . At the time of the cuvée, a small percentage of Pinot Noir vinified in red is added to the bases. The second <strong>fermentation</strong> takes place in the bottle according to the <em>Champenoise</em> method, with a stop in the milk for at least 48 months.</li> <li><strong>Features:</strong> Brilliant coral pink <em>Colour</em>, with fine and persistent <strong>perlage</strong> . The grapes come from 40 crus of Champagne, planted on a total area of 300 hectares. Most of the grapes for winemaking are grown within a radius of 20 kilometers around the commune of Épernay. In this territory that extends between the Montagne de Reims, the Côte des Blancs and the Marne Valley, the grand crus of Pinot Noir, Chardonnay and Pinot Meunier coexist. It all began in 1818, when Nicolas François Billecart and Elisabeth Salmon got married and founded their champagne house. It is the story of a family, because Louis Salmon, Elisabeth's brother and enology enthusiast, also participates in the production of wines. And this is how, after seven generations, the whole family still contributes to handing down the tradition, remaining faithful to an unchangeable commitment: "Privilate quality, aim for excellence". In this parcel the vines are managed and cared for with extreme care, in full respect of the environment. The Maison Billecart-Salmon has chosen to return to traditional methods by reintroducing the draft horse and sheep. <p>Pol Roger <strong>Rosé</strong> Vintage is based on our <strong>Brut Vintage</strong> (60% Pinot Noir, 40% Chardonnay) to which we add, before bottling and mousse, about 15% still red wine (Pinot Noir) from the best crus of the Reims mountain. Produced only in <strong>limited quantities</strong>, the Brut Rosé Annata 2015 is aged in our cellars before being placed on the market.</p> <p>The must undergoes two débourbage (decantation), one in the press immediately after pressing and the second a débourbage à froid, in stainless steel tanks at 6°C over 24 hours. A <strong>slow cold fermentation</strong> with temperatures kept below 18°C takes place in stainless steel with each variety and each village kept separate. The wine undergoes a complete malolactic fermentation before final blending. The second fermentation takes place in the bottle at 9°C in the deepest Pol Roger cellars (33 meters below street level) where the wine is kept until the <strong>manual remuage</strong>, a rarity in today's Champagne . The very fine and persistent foam for which Pol Roger is renowned owes much to these deep, fresh and humid cellars.</p> <p>The wine is <strong>salmon pink in colour</strong> with orange reflections, embellished with fine bubbles. Its initial <strong>nose</strong> offers a good aromatic expression dominated by red fruits, such as cherry and raspberry, together with rose petals, all leading to a nice freshness. As it warms up, notes of candied cherries and candies add complexity to the whole. The palate is in balance with the nose - both of equal intensity and richness. On the <strong>palate</strong> it is fresh at the entrance with citrus notes of blood orange, then it is generous and enveloping revealing its aromas of red fruit. On the palate perfectly balanced, it offers good persistence. The character of this vintage is supported by power and vinosity.</p> <p>The Brut Rosé Vintage 2015 is the ideal choice to accompany fish such as grilled salmon or even sushi. <p>Krug Rosé is inspired by the dream of the fifth generation of the Krug family to produce a rosé Champagne that has never existed before and which reinvents itself every year, revealing a new face. All editions of Krug Rosé perpetuate this tradition.</p> <ul> <li><strong>Blend:</strong> Krug Rosé fascinates, as it replaces a good red wine with a touch of panache at the table.
