<p>PAJENA BARBERA D'ALBA is a rich and pleasantly surprising wine thanks to the balance between acidity, body and minerality that integrate into an evident and well-defined fruit. PAJENA is elegance made Barbera.</p> <p>The bunches are selected by hand on the vibrating table and cooled with carbonated snow to avoid oxidation and considerably reduce the use of sulphites. After destemming, the grapes are selected by hand on a second vibrating table and subjected to soft pressing. The entire process takes place without the use of augers in order to treat the grapes in the most delicate way possible. In the fermentation process, the must is cooled to preserve its best characteristics before fermentation in temperature-controlled stainless steel tanks. The maceration is of medium duration (over 18 days) with délestage. <p>This Barbera d'Alba comes from its own vineyards located in Barolo and Monforte d'Alba. After the harvest done strictly by hand as per tradition, only the best grapes are selected based on the harvest of the 2 vineyards. Thanks to a long aging in barrique, this Barbera is of the highest quality and longevity. the special, very heavy bottle recalls the bottles of the past and enhances their qualities and organoleptic characteristics.</p> <p>After the harvest comes the destemming, soft pressing, followed by fermentation in stainless steel tanks at a controlled temperature of 30°C. This consists in leaving the must in contact with the skins for 15 days. After racking, the ideal conditions are created in the cellar for a perfect malolactic fermentation. The wine ages in French barriques for 18 months and ages in the bottle for 6 months before being sold. For all steps nothing is overlooked; everything is done in respect of tradition but with the most modern methods and tools.</p> <p>Intense and brilliant ruby red color, with intense aromas of varietal rose, ripe red fruits, notes of vanilla. <p>Barbera d'Alba Vietti is made from grapes from vineyards located in Castiglione Falletto, Monforte d'Alba, La Morra, and other towns in the Langhe. The age of the vines varies from 25 to 40 years. The average density per hectare is about 4500 vines with Guyot cultivation. The soil is clayey limestone. The alcoholic fermentation lasts about 2 weeks and is carried out in steel. The déléstages are frequent and the pumping overs are daily. Malolactic fermentation in steel.</p> <p>Ruby red with an aroma of ripe cherries and vanilla.
