The Zuppa Rustica is a mix of pearl barley, pearl spelled, lentils all grown on the Colfiorito plateau. It is a very tasty dish that can also be considered a single dish given the concentration of nutritional factors present and in particular the protein intake made up of the combination of cereals and legumes.
