Colfiorito soup is a mix of hulled chickpeas, Colfiorito lentils, hulled peas and hulled red lentils, all grown on the Colfiorito plateau. It is a very tasty dish that can also be considered a single dish given the concentration of nutritional factors present.

SPECIFIC NOTES: Soup with legumes, cooking 40 minutes, soaking not necessary.

RECOMMENDED PAIRINGS: The Colfiorito soup is rich in nutrients, excellent as a single dish to be served with croutons and extra virgin olive oil.
