The Zuppa Francescana is a mix of pearl barley, hulled peas and hulled cicerchia from Colfiorito, all grown on the Colfiorito plateau. It is a very tasty dish that can also be considered a single dish given the concentration of nutritional factors present and in particular the protein intake made up of the combination of cereals and legumes.

SPECIFIC NOTES: Soup with legumes and cereals, cooking 45 minutes, soaking not necessary.
INGREDIENTS: Pearl barley, hulled peas and hulled grass peas, may contain traces of gluten.

RECOMMENDED PAIRINGS: The Franciscan soup is rich in nutrients, excellent as a single dish to serve with croutons and extra virgin olive oil.
