<p>The Chianti Classico Riserva La Forra is produced by Folonari with grapes from the vineyards of the Tenuta di Nozzole, located at 350 m above sea level in the municipality of Greve in Chianti. It is an elegant red that macerates with délestage and pumping over in stainless steel wine vats at a controlled temperature of 28°C for 20 days and is aged in steel only for the first 3 months, then passes into French oak barrels for 16-18 months. The scents are reminiscent of cherries in alcohol and ripe red fruits. Fruity, elegant with lively but extremely fine tannins. Efforts were initially concentrated on the vineyards, now converted to organic farming, with new plants and the enhancement of existing ones through an articulated selection project clones. In 2003 Montefalco Sagrantino was born, followed the following year by Montefalco Rosso. However, there was a need for a new cellar and the Lunelli family, by virtue of a solid and old friendship with Arnaldo Pomodoro, one of the greatest contemporary artists, proposed to him to create it. The Master accepted with enthusiasm and after the first inspection he had already imagined the project. The “Carapace” – as Pomodoro wanted to call the cellar – required six years of work and was inaugurated and open to the public, for visits and tastings, in June 2012. <p>In the 1970s and 1980s, some ambitious winemakers began to shy away from the strict rules of Chianti Classico. Their dissatisfaction with the mediocrity of the contemporary Tuscan wine scene has unleashed a <strong>wave of creativity</strong> and <strong>experimentation</strong> with high quality grapes, clones and winemaking techniques. Querciabella was born in this specific context and <em>Camartina</em> not only laid the foundations for the high quality vinification of the company brand, but also started its rise to success. The flagship of Querciabella, it is one of the few historical wines, collectively known as <strong>Super Tuscans</strong>, which have considerably elevated the position and prestige of Italian wine production on the world stage.</p> <ul> <li><strong>Features:</strong> The <strong>color</strong> is an elegant, intense ruby red. With its marl soils and southern exposure, the Casaocci Sud vineyard offers the ideal environment for textbook Cabernet Sauvignon, here refined by lighter and more elevated notes. On a cooler slope, Poggerino's denser, clay-rich soils typically provide the structural backbone of the Cabernet, as well as the intensity and depth needed for successful aging. Sangiovese grows in selected vineyard blocks ranging from 350 m to 600 m asl with variable orientation, from south to south-west. At lower altitudes, marl and clayey soils give elegance to the wines while higher up the sandstones become prevalent, giving the Sangiovese a juicier vitality. Camartina is produced only in optimal vintages, while micro-vinification in small batches and extremely limited bottling guarantee artisanal excellence. A delicate but precise management of the fermentation in the French oak fermenters allows a beautiful integration of the tannins and the development of the structure. After the malolactic fermentation, the two cépages are aged separately for about 18 months in French oak barrels, up to 20% new, before selecting the best lots for the final blend. <p>The "San Giorgio" by Lungarotti is an important red, with a good structure and with a considerable potential for evolution over time. It is considered the first real “Superumbrian”. It is customary to use this type of definition, with the name of the region of origin of the wine, preceded by the suffix "Super", to indicate wines produced from blends in which there are also international vines, in particular Bordeaux. The "San Giorgio" was born in 1977 from the skilful union of the native vines of central Italy, Sangiovese and a small percentage of Canaiolo, with the noble Cabernet Sauvignon. Thanks to the perfect balance between the three varieties, Cabernet Sauvignon does not dominate the other grapes, but integrates perfectly, enriching their aromatic profile.</p> <ul> <li><strong>Method:</strong> To produce San Giorgio wine, the Cabernet Sauvignon, Sangiovese and Canaiolo grapes are harvested in mid-September. The vineyards are cultivated with spurred cordon, with low yields and on the most suitable soils for each variety. The Cabernet Sauvignon is planted on medium-textured soils, with a good presence of skeleton and limestone, which insist on a tuffaceous subsoil. Sangiovese comes from the Monticchio area, where it is grown on soils characterized by the presence of clay and sand. Fermentation takes place in steel, with maceration on the skins lasting 25/28 days. This is followed by an aging period of 12 months in barrique and at least 6 months in bottle.</li> <li><strong>Characteristics:</strong> The Red "San Giorgio" represents a successful interpretation of the marriage between local grapes and Cabernet Sauvignon. <p>Since 1997, the Prugnolo Gentile grapes, located in the most suitable areas of Montepulciano, have given life to the Nobile di Montepulciano Riserva TorCalvano. The clone of Sangiovese grosso in the Montepulciano area is also called Prugnolo Gentile. The bunch is medium-small, winged and compact with a large berry with a resistant skin. <p>The Rosso di Montepulciano "Sabazio" from the La Braccesca winery of the Antinori family is a Tuscan wine made with an important base of <strong>Sangiovese</strong>, to which is added a small percentage of <strong>Merlot</strong> to make it softer, rounder and fruitier. It is a medium-bodied red, vinified exclusively in steel, which ages for a few months before being put on the market. The profile retains the typical varietal face, characterized by <em> fragrant fruity aromas</em> and an immediate expressive freshness, which makes it particularly pleasant to drink. <p>The best selection of the Badia Tenuta di Passignano boasts the best honor that guarantees and controls its Chianti Classico denomination. The grapes used for its winemaking is 100%pure Sangiovese. The area in which it is bred enjoys particular climatic conditions that impose a careful selection throughout the production process. A soft <em> thinning </em> of the bunches, the berries are selected manually at the table, with the aim of enhancing the quality of the product. This operation proved to be fundamental to guarantee a great potential for the processing of future westers. <em>Alcoholic fermentation</em> is then developed in about 10 days, following which the wines remained in maceration with the skins for a further 10 - 12 days. Its fundamental importance in the history of Chianti is reported on hundreds of volumes, now kept in the State Archives of Florence, which give news of the vineyards of Sangiovese and the crops of the area. In confirmation of this, in 1983, in the surrounding land in Passignano a plant of millennial vitis vinifera was found.
