The best selection of the Badia Tenuta di Passignano boasts the best honor that guarantees and controls its Chianti Classico denomination. The grapes used for its winemaking is 100%pure Sangiovese. The area in which it is bred enjoys particular climatic conditions that impose a careful selection throughout the production process. A soft thinning of the bunches, the berries are selected manually at the table, with the aim of enhancing the quality of the product. This operation proved to be fundamental to guarantee a great potential for the processing of future westers. Alcoholic fermentation is then developed in about 10 days, following which the wines remained in maceration with the skins for a further 10 - 12 days. After the spinsing , the wines were immediately placed in Hungarian and in part French oak barriques to meet the malolactic fermentation, which is decorated spontaneously by the end of the year; After the labor, the wines, still separated on the basis of the origin of the vineyard, dealt with the refinement period in 300 lt and 225 lt Hungarian oak barriques, and partly also in 225 lt of French origin, for a period for a period of about 14 months. During this long phase, the different lots have been constantly tasted and controlled, so that they can be enhanced by the evolution in wood, and then be assembled in the final cut at the end of the aging period. The wine was then bottled and continued its maturation in the bottle for another 12 months.

Badia in Passignano is located above Sambuca Val di Pesa, 3 km south of Tenuta Tignanello; Its 223 hectares, of which 65 vines extend to one of the most beautiful and vocate areas of Chianti Classico.
