Toscana IGT Il Borgo Tenute del Cabreo 2017 Ambrogio e Giovanni Folonari

The Cabreo estates are developed in two areas, both in the municipality of Greve in Chianti. The first, called Zano, consists of 45 hectares of vineyards used for Sangiovese and Cabernet Sauvignon for the production of Cabreo wine. For over thirty years the Supertuscans produced in the Cabreo Estates have been surprising for their personality and refinement. Cabreo Il Borgo has been thrilling since 1982 with its historic blend of Sangiovese and Cabernet Sauvignon.

• Method: After vinification, it ages for 18 months in French oak barrels 225 liters of which 30% new, 40% one year old and 30% two years old. The nose is complex and intriguing with typical hints of fragrant fresh fruit and spices. When tasted, the pleasant freshness of the fruit is found in a sip that reveals great elegance and softness to close in an intense and persistent finish.
• Features: Wine with complex and fascinating aromas it is distinguished by a fresh and crunchy fruity taste with a silky finish and superior persistence. Depth, power and elegance are its characterizing sensory traits.
• Pairings: Full-bodied wine that needs substantial dishes, in this case with meat main courses. Try it with a guinea fowl stuffed with mushrooms and blueberries. It goes perfectly with first courses of meat and lasagna, roasts, grilled red meats, stewed red meats, game, aged cheeses or just in the right company.
