The Ripasso Valpolicella Superiore DOCG Fumanelli comes from 30-40% Corvina, 40-50% Corvinone and 10-20% Rondinella grapes. The pergola vineyards have an average age of 25-30 years, the espalier with Guyot system at 2500 vines per hectare instead have an age of 8-10 years. The harvest is done by hand with a strict selection of the grapes in the best ripening stage at the end of September / mid-October. The vinification takes place after cold maceration. This is followed by a period of rest in wood for the second passage for 8-10 months, and further maturation in the bottle for at least 3 months
Not excessively intense ruby red colour, clear scent of ripe fruit which recalls cherry and very ripe morello cherry.
