<p>Spicy guanciale is one of the most appreciated products of butchery and by lovers of strong but not overwhelming flavours, the main ingredient of <strong>amatriciana</strong> and <strong>carbonara</strong>, two of the best known and imitated all over the world. To the eye it has a bright red and orange color, naturally derived from the spices that decorate and flavor it and which give it a consistent scent even from inside the package. To fully enjoy the spicy guanciale it is necessary to remove the rind and cut the product by hand dividing it into strips, at this point it is ready to be used in the preparation of delicious homemade sauces or simply to be spread on fresh bread.</p> <p><strong>PROCESSING OF THE CHEEK JACK:</strong> The cheek pillow is obtained from the carefully trimmed pig cheek. It is salted and cured like bacon, then cured. It looks similar to flat bacon, even if it contains less fat. It comes with the classic lean veins combined with the precious fat which together give the product a strong flavor without comparison. <p>Pecorino IGP is a wine with an enveloping but at the same time delicate and fresh taste, made from 100% Pecorino grapes.</p> <ul> <li><strong>Method:</strong> Following the pressing of rasping, there is contact with the skins of the must, for a few hours, at a low temperature. Subsequently a soft pressing was carried out, thus obtaining the must, which is subsequently clarified with the flotation unit, for a treatment of a few hours. <p>The Brunello di Montalcino "Vigna Loreto" comes from the bunches of a red grape variety which, especially in Tuscany, manages to express itself on sublime qualitative levels, Sangiovese. The grapes of this variety are carefully selected during the harvest by the Mastrojanni winery team, so as to guarantee only the best of the terroir of origin.</p> <ul> <li><strong>Process:</strong> The grapes , once they arrive in the premises used for winemaking, they ferment alcoholicly. And in those years, very few began a winemaking adventure in Montalcino. Today, thanks to an exceptional terroir and to men who have believed in it for decades, Mastrojanni is one of the most respected Brunello di Montalcino companies by connoisseurs. These places have been sparsely populated and little cultivated throughout the history of humanity: the earth is therefore virgin, clean, free of any pollutant that, at the hands of man, could have defaced it. In this land, in 1975, the lawyer Gabriele Mastrojanni bought the San Pio and Loreto farms and decided to plant the first vineyards which still partly produce our wines today. The taste is characterized by having a full, frank, savory, rightly tannic flavour, with a pleasant and persistent aftertaste of wild berry and almond jam.</p> <ul> <li><strong>Production:</strong> Sangiovese grosso grapes and complementary grapes are used for its production. The vineyard used for its production comes from the Chianti hills, an area traditionally suited for the happy combination of soil, exposure and climate. The vineyards are trained according to the Guyot and spurred cordon system on clay-limestone soils with the presence of alberese and galestro. The vinification requires that the well-ripened grapes, harvested in October, after a cold pre-fermentative maceration of 3-4 days, are traditionally vinified in red. During fermentation at a controlled temperature of 28 to 30°C, skilful pumping over is carried out.
