The plants grow in vineyards located at a height above sea level between 280 and 350 meters, characterized by a clayey and silty subsoil, where there is also the presence of skeleton. The must ferments in stainless steel conical vats at a controlled temperature, with punching down that integrates the pumping over. Fermentation and maceration have a total duration of 12 days. <p>Brunello di Montalcino Ugolforte is a pure Sangiovese Grosso made from 20-25 year old vines, located between 250 and 400 meters above sea level and which have their roots in a subsoil rich in tuff and clay. <p>The Chianti San Lorenzo DOCG has a distinct and clear scent of raspberry and blackberry with hints of violet and iris. The taste is characterized by having a full, frank, savory, rightly tannic flavour, with a pleasant and persistent aftertaste of wild berry and almond jam.</p> <ul> <li><strong>Production:</strong> Sangiovese grosso grapes and complementary grapes are used for its production. The vineyard used for its production comes from the Chianti hills, an area traditionally suited for the happy combination of soil, exposure and climate. The vineyards are trained according to the Guyot and spurred cordon system on clay-limestone soils with the presence of alberese and galestro. The vinification requires that the well-ripened grapes, harvested in October, after a cold pre-fermentative maceration of 3-4 days, are traditionally vinified in red. This portion of the countryside has always been linked to the production of local wines, the white and red of Assisi, once excellent wines without a blazon which, a few years ago, obtained recognition of their quality level with the DOC. A few years ago the Migliosi family, for a long time among the most shrewd and qualified local producers, acquired a splendid estate in the locality in question, the Ponte Rosso, with prestigious vineyards and excellent exposure. <p>The Nobile di Montepulciano selection 'Asinone' by Poliziano is produced only in the best vintages and the number of bottles produced reflects the quality of the vintage itself. It ages in barrique for 16-18 months before being bottled. On average, the production is around 20,000-40,000 bottles.</p> <ul> <li><strong>Method:</strong> This wine, produced in the municipality of Montepulciano, in the province of Siena, is obtained from grapes <strong>100% Sangiovese</strong> from a single vineyard facing south, south-west and located on rolling hills at about 350-400 meters above sea level. The vines, which have different ages, are trained using the spurred cordon method on soils rich in skeleton characterized by clayey-loamy soils. The winery is a family-run business, owner of about 165 hectares of vineyards, today managed by Federico Carletti who, taking over the reins from his father, manages in a few years to propose an innovative and modern production philosophy, becoming one of the most appreciated names in the whole Tuscany. “Asinone” Nobile di Montepulciano di Poliziano is produced with carefully <em>selected and hand-picked</em> grapes in small crates towards the end of September. The bunches, taken to the cellar, are destemmed and delicately pressed to then carry out the <em>alcoholic fermentation</em>, with frequent daily pumping over, in stainless steel tanks at a controlled temperature with a maceration on the skins for about 20- 25 days. <p>The Monlclivio Enrico Serafino is known for its powerful elegance. Thanks to the careful management of the harvest and the aging in wood, the characteristics of the territory are perfectly recognizable in the wine. MONCLIVIO is the result of the harmonious union between land, Nebbiolo and tradition. Enrico Serafino Barolo since 1878.</p> <p>The bunches are selected by hand on a vibrating table and cooled with carbonic snow to avoid oxidation and considerably reduce the use of sulphites. After destemming, the grapes are selected by hand on a second vibrating table and subjected to soft pressing. The entire process takes place without the use of augers in order to treat the grapes in the most delicate way possible.</p> <p>The must is cooled to preserve its best characteristics before fermentation in stainless steel tanks and conical oak vats at a controlled temperature. The maceration is long lasting with the délestage technique and, in part, with a submerged cap for over 28 days. <p>The Brunello di Montalcino "Vigna Loreto" comes from the bunches of a red grape variety which, especially in Tuscany, manages to express itself on sublime qualitative levels, Sangiovese. The grapes of this variety are carefully selected during the harvest by the Mastrojanni winery team, so as to guarantee only the best of the terroir of origin.</p> <ul> <li><strong>Process:</strong> The grapes , once they arrive in the premises used for winemaking, they ferment alcoholicly. We then proceed with the aging phase, in which the wine remains for 36 months to rest in Allier oak barrels; after bottling, a further period of maturation takes place, which lasts in glass for 8 months.</li> <li><strong>Characteristics:</strong> The "Vigna Loreto" is a Brunello di Montalcino DOCG which, in the glass, it takes on deep and compact contours, which recall the color of ruby. The range of perfumes that envelops the nose is assembled on mainly fruity notes, embellished with light touches of sweet spices. These places have been sparsely populated and little cultivated throughout the history of humanity: the earth is therefore virgin, clean, free of any pollutant that, at the hands of man, could have defaced it. In this land, in 1975, the lawyer Gabriele Mastrojanni bought the San Pio and Loreto farms and decided to plant the first vineyards which still partly produce our wines today. Others, before him, starting with the pioneer Biondi-Santi, had had the same experience and the area had clearly answered that the best vine for these lands is Sangiovese Grosso. Mastrojanni, wanting to make a great Brunello, planted almost exclusively Sangiovese. In those same years Maurizio Castelli, still our oenologist today, became the company's reference consultant.
