The Chianti San Lorenzo DOCG has a distinct and clear scent of raspberry and blackberry with hints of violet and iris. The taste is characterized by having a full, frank, savory, rightly tannic flavour, with a pleasant and persistent aftertaste of wild berry and almond jam.
- Production: Sangiovese grosso grapes and complementary grapes are used for its production. The vineyard used for its production comes from the Chianti hills, an area traditionally suited for the happy combination of soil, exposure and climate. The vineyards are trained according to the Guyot and spurred cordon system on clay-limestone soils with the presence of alberese and galestro. The vinification requires that the well-ripened grapes, harvested in October, after a cold pre-fermentative maceration of 3-4 days, are traditionally vinified in red. During fermentation at a controlled temperature of 28 to 30°C, skilful pumping over is carried out. Subsequently, the wine ages for a short time in wood in order to enhance its characteristics of freshness and softness.
