The Componimento Paglione comes from a careful selection of the grapes followed by a delicate destemming andvinification in classic red at controlled temperature. During the fermentation phase, the must is subjected to pumping over and punching down processes which guarantee the desired extraction of the constituents present in the skins. The fermentation takes place spontaneously, i.e. without the addition of selected yeasts. The product obtained is subsequently refined and is not subjected to any clarification or pre-bottling filtration treatment.
