Some say that "Franciacorta" originates from "Petite France", an affectionate name given to it by Charlemagne. The estate cultivates the varieties that traditionally lend themselves best to the production of Franciacorta. Chardonnay, with a typical aroma with floral and fruity notes, Pinot Noir, which gives structure and personality, Pinot Blanc, savory and mineral. The historic vineyards of the estate are located on the hill of S. Stefano: their precious grapes, with an intense aroma, give the wine complexity and balance. The most recent vineyards planted in a plot surrounded by a wall locally called "brolo", are destined to produce great grapes for a great wine. Under the arcades that delimit the building complex of the estate are the winemaking and aging cellars. Here, the bottled wine ages on the lees for long periods, longer than the minimum ones prescribed by the disciplinary. The remuage is still carried out by reserving the utmost attention to each single bottle. The result of this combination of precautions and winemaking processes are the perfect expression of the territory.

The Champagne Brut "Majeur" is a product of the prestigious Ayala maison. This Maison is undoubtedly characterized by a long and troubled history; today it is owned by Bollinger who has meant that, following innumerable historical vicissitudes, it could regain its initial splendor; it is no coincidence that it is one of the very few Maisons able to cover its needs using only grapes produced in its own vineyards! Champagne Brut Majeur undoubtedly owes its greatness to the peculiar assemblage in which the character of the Pinot Noir and the generosity of Chardonnay are combined with Pinot Meunier which is able to harmonize everything making it extremely pleasant to drink.

Method: After harvesting, fermentation and making the sparkling wine, the champagne is aged for over 30 months on its lees. It is precisely this step that makes this wine elegant, fine, lively and snappy, with fresh and fruity notes that never break a delicate balance. The finish is decisive and surprisingly long.

Characteristics: The Brut Majeur of the Maison Ayala is an elegant and refined champagne that offers a delicate fruity touch. It is a cuvée with fine bubbles and a beautiful golden colour. On the nose, we discover notes of yellow fruits and a sour touch. In the mouth, the Brut Majeur signed Ayala offers an attack full of lightness. The champagne is precise, expertly dosed, without acidity, but with a slight minerality that gives it an ethereal aspect.

Pairings: Ideal with shellfish, fish main courses, sushi and carpaccio .

SIZE / WEIGHT: 0.75L bottles.

ORIGIN: France.

GRAPES: 40% chardonnay, 40% pinot noir, 20% pinot meunier.

ALCOHOL: 12% vol.

SERVING TEMPERATURE: Temperature between 8/10°C.

STORAGE METHOD: in a cool place away from sunlight.

SPECIFIC NOTES: Contains sulphites.

PRODUCER: Champagne Ayala - Aÿ , France.

Maison Ayala

The history of the Maison is singular, and it is above all that of a visionary spirit, with a melodious name that came from afar. A name that seems created on purpose, by pure chance, for the town of Aÿ, the seat of AYALA since its creation. Curious and audacious, Edmond de AYALA has always known how to cultivate a taste for going further. Maison AYALA is animated by the spirit of excellence and adventure inspired by its founder. Pioneer in the introduction of a drier style, thanks to his intuition he launched the "dry champagne" in 1865 with a dosage of only 21 g / l. A bold choice in favor of purity, in contrast to the traditional French dosage of the time of over 150 g/l. Since its creation, the young Maison has been an essential point of reference: it is among the founding members of the Syndicat des Grandes Marques in 1882, the current Union Des Maisons de Champagne. After France, the Maison continues its expansion in England thanks to Fernand, Edmond's younger brother, which allows the brand to achieve lasting notoriety, until it obtains the Royal Warrant in 1908 after the coronation of King Edward VII. In the 1920s the Maison experienced a golden age with a production of one million bottles, which places it among the great Maisons of the time. After the war, the Maison was led by two great men of Champagne, René Chayoux and Jean-Michel Ducellier, who worked for the interprofessional committee and contributed to the development of the Appellation. To restore the status to Sleeping Beauty of Aÿ she deserves, the construction of a new cellar in 2007 allows the Maison to have a modern winemaking tool at its disposal, worthy of the qualitative ambitions of Champagne AYALA. The return of the Maison to the international scene begins with success. Since 2006, Caroline Latrive begins to immerse herself in the savoir-faire of AYALA alongside Nicolas Klym, whom she succeeds as Chef de Cave of the Maison in 2012. At the same time, Hadrien Mouflard is appointed General Manager, with the mission of accelerating the development of AYALA in France and abroad. The style of the wines asserts itself with the Chardonnay vine as the protagonist. The identity of the brand is completely rethought, with the creation of new labels inspired by the historical codes of the Maison. A contemporary, graphic and chiseled aesthetic style, just like the new accommodation and tasting facility.

Elegant and refined, the Brut Réserve cuvée is the champagne for all occasions. The Brut Réserve is obtained from a blend of equal parts of three Champagne vines: pinot noir, pinot meunier and chardonnay from 30 different crus. 25% of reserve wines are used to make this cuvée:

- Pinot Noir, for its structure, body and power, comes mainly from some of the best crus from the Montagne de Reims;

- The Pinot Meunier, due to its freshness, softness and fruitiness, comes from different crus of the Marne Valley and the Epernay region;

- Chardonnay, due to its aromatic complexity, finesse, elegance and lightness, comes from Epernay and from some of the best crus of the Côte des Blancs.

The grapes are pressed quickly and gently. A first decantation is carried out at the crushing center, then a second one in our cellar, cold (6°C), for 24 hours. Alcoholic fermentation takes place at a low temperature (18°C) in thermoregulated stainless steel vats where the grapes and crus are vinified separately before final blending. Malolactic fermentation is carried out on all the wines of the House. After tasting, blending and bottling, fermentation and aging take place in the cool of our cellars, 33 meters deep . Each bottle is shaken by hand, in the traditional way, before disgorgement and dosage. The wines then settle for at least three months before being shipped.

The Brut Réserve Pol Roger has a beautiful straw yellow color and an abundant and fine effervescence. The nose, powerful and engaging, initially reveals aromas of fruit (pear, mango.) and then unfolds light hints of honeysuckle and white jasmine, then continues with notes of brioche and vanilla.
Behind a frank and dynamic attack, the wine offers a beautiful harmony and a pleasant freshness, while presenting a certain structure. On the palate, stewed fruit flavors (quince jelly, apricot jam) happily marry with fragrances of beeswax and acacia honey. Composed of both fruity (candied orange peel, mandarin, etc.) and spicy (cardamom, green anise) notes, the aromatic persistence is remarkable.

For its structure and its vinosity, its elegance and its freshness, the Brut Réserve Pol Roger offers an optimal balance between power and finesse that makes it an extraordinary aperitif wine or a privileged companion to a meal all in champagne.

SIZE / WEIGHT: 0,75 l bottles

ORIGIN: France.

GRAPES: Pinot Noir, Pinot Meunier and Chardonnay.

ALCOHOL: 12,5% vol.

SERVING TEMPERATURE: Temperature between 4/8°.

STORAGE METHOD: in a cool place away from light of the sun.

SPECIFIC NOTES: Contains sulphites.

PRODUCER: Champagne Pol Roger - Epernay, France.

The grapes come from 40 crus of Champagne, planted on a total area of 300 hectares. Most of the grapes for winemaking are grown within a radius of 20 kilometers around the commune of Épernay. In this territory that extends between the Montagne de Reims, the Côte des Blancs and the Marne Valley, the grand crus of Pinot Noir, Chardonnay and Pinot Meunier coexist. It all began in 1818, when Nicolas François Billecart and Elisabeth Salmon got married and founded their champagne house. It is the story of a family, because Louis Salmon, Elisabeth's brother and enology enthusiast, also participates in the production of wines. And this is how, after seven generations, the whole family still contributes to handing down the tradition, remaining faithful to an unchangeable commitment: "Privilate quality, aim for excellence". In this parcel the vines are managed and cared for with extreme care, in full respect of the environment. The Maison Billecart-Salmon has chosen to return to traditional methods by reintroducing the draft horse and sheep. Thus the porosity and biodiversity of the soil improve, the roots develop in depth and the minerals extracted favor the growth of smaller and more concentrated grapes, which best express all the peculiarities of our terroir. An exceptional champagne was born in the Clos Saint-Hilaire which takes its name from the patron saint of Mareuil-sur-Aÿ. Produced exclusively from Pinot Noir vinified in barrels, it develops a rare complexity and surprising freshness. A limited quantity of bottles is produced for each vintage: between 3500 and 7500, all numbered. In the 1950s, the Maison introduced the cold racking technique and stainless steel vats for longer fermentation at low temperatures. The vat cellar mainly uses small thermoregulated vats (47 hectoliters), which allow the traceability of the vines and parcels to be observed. This type of cru by cru and vine by vine vinification makes it possible to preserve all the peculiarities of the terroir. By making wine at a low temperature, the fermentation process is slowed down and favors airy and delicate aromas in which all the purity of the fruit is manifested. The authentic expression of the Billecart-Salmon style.

She was a cultured young woman from a Norman merchant family; he is a masterful winegrower and botanist. A year after their marriage, in 1811 they founded the Maison Perrier-Jouët: born from their desire to create a different Champagne House. The founders' passion for art, nature and champagne has been handed down from generation to generation. Their son Charles Perrier, a botanist like his father, took over the Maison in 1848. The family philosophy of creative freedom and unconventional observation of nature is intrinsic to the history of champagne. These values still shape the Maison Perrier-Jouët today. Cuvée Belle époque A unique heritage Art Nouveau, inspired by the graceful and sinuous forms of nature, flourished throughout Europe in the late 19th century. The movement's exuberance and creative freedom paved the way for 20th-century avant-garde art. The ethos of Art Nouveau was to reinvent nature to re-enchant the everyday. The affinity of the Maison Perrier-Jouët with the Art Nouveau movement is best expressed by the emblematic anemone motif illustrated for the Maison in 1902 by Emile Gallé. Today, the Maison's lasting connection to art and nature translates into an extravagant universe that reinvents luxury as a meaningful experience with artistic collaborations.

Produced only in limited quantities, the Brut Rosé Annata 2015 is aged in our cellars before being placed on the market.

The must undergoes two débourbage (decantation), one in the press immediately after pressing and the second a débourbage à froid, in stainless steel tanks at 6°C over 24 hours. A slow cold fermentation with temperatures kept below 18°C takes place in stainless steel with each variety and each village kept separate. The wine undergoes a complete malolactic fermentation before final blending. The second fermentation takes place in the bottle at 9°C in the deepest Pol Roger cellars (33 meters below street level) where the wine is kept until the manual remuage, a rarity in today's Champagne . The very fine and persistent foam for which Pol Roger is renowned owes much to these deep, fresh and humid cellars.

The wine is salmon pink in colour with orange reflections, embellished with fine bubbles. Its initial nose offers a good aromatic expression dominated by red fruits, such as cherry and raspberry, together with rose petals, all leading to a nice freshness.
Krug Rosé is inspired by the dream of the fifth generation of the Krug family to produce a rosé Champagne that has never existed before and which reinvents itself every year, revealing a new face. All editions of Krug Rosé perpetuate this tradition.

Blend: Krug Rosé fascinates, as it replaces a good red wine with a touch of panache at the table. This Champagne is a delicate blend of vintage wines and reserve wines selected from the Maison's extensive collection, completed by the traditionally macerated Pinot Noir which brings body and spicy notes. The rest of about seven years in the Krug cellars gives Krug Rosé refined character and elegance.

The Harvest: The 24th edition of Krug Rosé was created starting from the 2012 harvest , a splendid year but with a limited harvest due to a series of meteorological events. During the winter and spring of 2012, the Champagne vineyards suffered from frost, rain and thunderstorms, only to face the driest ripening season since 1974 and this led to a 20% drop in grape production. Every year, to recreate the idea of the fifth generation of Maison Krug to compose an unexpected, bold and elegant Rosé Champagne, the Maison begins with the selection of wines of the year and of previous vintages which together can release all possible expressions of fruit . This composition then embraces a traditionally macerated red Pinot Noir, which brings spicy notes, color and structure.

Overall, the reserve wines of the extensive collection of the Maison make up 71% of the final blend of this edition of Krug Rosé. Krug Rosé is the most nonconformist of the Maison's Champagnes, designed for daring gastronomic adventures. Thanks to the unique combination of breadth, depth and grace, it harmonizes perfectly with dishes with a strong flavor, replacing excellent red wines with its vivacity.

Pairings: Perfect with foie gras, lamb, white meats, game, venison or spicy dishes.

Taste and smell: This Champagne has an incredibly delicate pink colour, a promise of elegance. He focused on creating exceptional champagnes that fully expressed the symbiosis between land and vine. Because he likes to travel the world, he has developed a network of partners who are as passionate as he is and offer people from all over the world the chance to taste his exceptional champagne. The history of our family dates back to the 18th century. From the beginning we were winemakers working in the small village of Venteuil. Venteuil is not far from Épernay, on the southern slopes of the Marne valley. At the time, the Coutelas family worked their vineyards, like many other winemakers, and sold their grapes to the big Champagne brands and merchants. Jean-Pierre's ancestors on his father's side worked vineyards near Reims, on the Saint-Thierry massif, where our Maison still cultivates some plots today. Jean-Pierre was born in 1951, in Venteuil, son of Léon Marniquet and Thérèse Coutelas. The first son of a large family, he had a peaceful childhood amidst the family vineyards. Jean-Pierre always knew that his daughters Cyrielle and Solène would eventually succeed him and run the farm. After years of university studies, each of them now has a profession they love, far from the Maison. However, it eventually became obvious that they were also preparing to one day take over the family business that their father had founded and developed with passion for 50 years.

The four successive generations of grape harvesters-manipulators have since then perpetuated their passion for the vine and their meticulous work on the terroir with respect for the purest Champagne know-how. The result of a particular selection and a masterful technique, it is the Pinot noir d'Ecueil meticulously worked over the years that instills finesse and character in the Champagne Louis Brochet. Grandmother of the family since the 19th century, Marie Arsène Brochet selects with the greatest care the best vines from her vineyard by applying a line of varnish on their trunk. Already the search for a very particular quality and typicality of the terroir was at the center of her concerns. Only the vines marked for three consecutive years were selected to then be harvested and grafted. This mass selection technique has since made it possible to develop the exceptional character of Pinot Noir d'Ecueil, a grape variety which today represents ¾ of the production of Champagne Louis Brochet. It is all the passion for the terroir and the attachment to her vineyard that she passed on to her son Louis Brochet. Born in 1881, just 100 years before his great-grandson, Louis Brochet was lulled by the rhythm of the Champagne harvest. It is through the transmission of meticulous gestures but above all of the passion that inhabited his mother that he too became passionate about the vine and made it his profession. The years have passed and the magnificent harvests have arrived to greet an intense and innovative work, Louis Brochet marks a turning point in the history of the family. He will be at the origin of the first label that presents "Champagne Louis Brochet", as part of a brand identity approach that was innovative and ambitious for the time. He is a character who has marked the history of the family, to whom his descendants Hélène and Louis Brochet wanted to pay homage years later, in 2011, by giving their name to the brand. Accompanied by his wife Yvonne Hervieux, Henri Brochet (son of Louis) was the first to really set up the Domaine's champagne development and marketing business. Entrepreneurs at heart and with a strong character, both bring a new dimension to family businesses and have this desire to make the Champagne they produce more widely known. They build their brand and thus sign the commercial beginning of the Domaine, which will prove to be promising since the Domaine Brochet-Hervieux will carry the family champagne for nearly 70 years. Alain Brochet, also accompanied by his wife Brigitte, has also perpetuated family values and this one relentless pursuit of quality following in the footsteps of his father Henri. He has developed the collection-manipulation business, the inheritance and the family know-how to offer exceptional champagnes, blends of meticulousness and passion. Very attached to his children Hélène and Louis, the transmission takes place over the years. The year 2013 marks a turning point. Hélène and Louis take over the estate with the aim of continuing the work of their father and of the previous 4 generations. Hélène, engaged in the sector since 2005, is at the origin of the modernization of communication, and of its commercial development, especially in exports, which represents 30% of the activity. Alain Brochet, also accompanied by his wife Brigitte, has also perpetuated family values and this relentless pursuit of quality following in the footsteps of his father Henri. He has developed the collection-manipulation business, the inheritance and the family know-how to offer exceptional champagnes, blends of meticulousness and passion. Very attached to his children Hélène and Louis, the transmission takes place over the years. The year 2013 marks a turning point. Hélène e Louis take over the estate with the aim of continuing the work of his father and of the previous 4 generations. Hélène, engaged in the sector since 2005, is at the origin of the modernization of communication, and of its commercial development, especially in exports, which represents 30% of the activity.
It is composed of 30% Chardonnay Grands Crus from the prestigious Côte des Blancs region and 70% Pinot Noir from the Grands Crus of the Montagne de Reims region. Comtes de Champagne Rosé owes the secret of its uniqueness to 15% still red wine which is added to the blend.

Characteristics: It is the rarest cuvée in the Champagne house. Its fruity character and soft and caressing taste make it a delicious luxury to be enjoyed only in small sips.

Harvest: The harvest began on August 30 and was carried out with cold dry wind. This has resulted in a healthy and good quality crop. The Chardonnay grapes were delicate and clear, and their citrus and white fruit aromas showed great potential. This great 2007 vintage lives up to all expectations as soon as the bottle is opened. It is a moment to cherish. Comtes Rosé draws nobility from its long aging in cellars declared by UNESCO.
