The fermentations last on average no more than 15/18 days during which multiple pumping over and délestage are performed.</p> <p>Once the fermentation is complete, the tanks are drawn off and the pomace is gently pressed under the watchful eye of our cellarmen, who have handed down the trade for generations.</p>

He dreamed of producing elegant and rich wines, obtained not only from native Sangiovese grapes, but also from those of his beloved Bordeaux and Burgundy. Sebastiano Cossia Castiglioni, Pepito's son, full-fledged investor and entrepreneur, converted the company to organic viticulture in 1988, making Querciabella one of the first wineries in Italy to make use of this practice. History of boundaries changed several times, disappeared empires, past wars . of people who stopped here. It is the story of a man who has gone through two world wars, lived in the Austro -Hungarian Empire first and in the young kingdom of Italy then, he lived on the rocky coast of the Istrian peninsula and in the lagoon degree. Livio Felluga moved to Friuli at the end of the 1930s, to settle on the sweet buttresses of the hills of Rosazzo. His dream of producing hill wine was interrupted by the call to the front. As if that were not enough, the return to Italy was not easy for the veterans of the Second World War: the physical, political and ethnic boundaries had changed, distorted forever, as the same agricultural and social landscape of the hill. The peasant population was leaving, further imposing the earth and abandoning crops, values and traditions linked to it. Livio Felluga had to undertake a new battle to resurrect the hill, convinced that only the rebirth of quality cultivation could bring life back to the Friulian countryside. With great courage he began to restore the ancient vineyards of Rosazzo and implant new ones, introducing innovative ideas and methods. A hard work, undertaken with great stubbornness and passion that will lead him over the years to create one of the most beautiful and significant corporate realities of the Belpaese, acquiring the title of re -founder of the Friulian winemaking tradition and reference actor of the Italian winemaker .</p>

<p>The Gewurztraminer vineyards are located in two areas: on the hills of Maso Warth, cultivated on calcareous soils with guyot systems to seek the maximum concentration of the fruit; on the alluvial cone of the Sorni, cultivated with the pergola system on clayey soils. This grape is usually harvested in the second half of September, when it gradually turns towards its characteristic pink colour.</p> <p>Persistent finish, hints of bread crust and dried fruit are perceived on the nose.</p> <p>Gewurztraminer is one of the most famous aromatic grape varieties. <p>The Riesling Renano vineyard was one of the first to be replanted in Maso Warth in 1990 when Francesco moved the company headquarters there. <p>The Roero Arneis DOCG Prunotto has a straw yellow color with light greenish reflections. The nose is intense with floral and fruity notes. On the palate it stands out for its good structure supported by a pleasant freshness. Along the finish.</p> <p>The grapes, collected in baskets, were softly pressed and the clear must was separated by cold decanting. Fermentation took place at a temperature not exceeding 18 °C for about 15 days. <p>The Antinori Vermentino was born in Bolgheri, in the splendid Guado al Tasso estate, one of the stars of the Antinori family's wine-growing Tuscany, together with those of Montalcino, Montepulciano, Cortona, Grosseto and Florence. Each vineyard parcel of this Vermentino from the Tuscan coast was <strong>harvested</strong> and <strong>vinified</strong> individually, so as to be able to combine wines from parcels with different characteristics and maturations in order to obtain a blend of <strong>superior quality</strong> . The wine thus obtained is a white which, thanks to the particular climatic conditions of the area, always expresses itself with harmony and freshness. A great lover of viticulture and having become the "major butler" of Grand Duke Leopold II in 1833, Guido Alberto devoted himself to oenology in his lands in Maremma. In the 1930s the land was inherited by Carlotta della Gherardesca Antinori, mother of Piero Antinori, and by her sister, who was married to Mario Incisa della Rocchetta (who had the nearby Tenuta San Guido as a dowry). The approximately 320 hectares of vineyards, located at an altitude of about 50 meters above sea level, are mainly cultivated with Cabernet Sauvignon, Merlot, Syrah, Cabernet Franc, Petit Verdot and Vermentino, the latter cultivated with both white and black berry. They enjoy a mild climate due to the nearby presence of the sea: the constant breezes mitigate the summer heat and the rigors of winter, clean the sky and keep the insolation index high. The soil of alluvial origin, from clayey-sandy to clayey-loamy, with the presence of Bolgheri agglomerate (skeleton), enhances the character and personality of the varietals through a great territorial identity.</p>
