The Bianco dell'Etna "Cavanera Ripa di Scorciavacca", is a white in which the Etna volcanic matrix is well present, dictated by an elegant sapidity, a refined fragrance and a harmonious sip, able to offer even a decent aging potential. Matured for six months on its lees and aged for a year in the bottle, it is a 100% guaranteed White from Etna.

• Characteristics: Color Straw yellow, al nose nose opens on broom and acacia flowers, and then continues with apple, peach and grapefruit, and closes on aromatic herbs and hints of flint. The drink is vibrant and sapid, fresh and citrusy like the nose, with good length.
• Pairings: Ideal with seafood, excellent with blue fish grilled, it is excellent with ravioli with butter and sage stuffed with sea bass. Absolutely to try with game and roasts.

In Trapani, at the end of the ' 70 Salvatore Di Gaetano started what is now one of the most important wineries in Sicily.
