These characteristics mean thatAcquerello rice is synonymous with Italian excellence!</p> <p>20 delicate steps are required to get watercolor rice, starting from the propeller, still today considered the best method to whiten rice by rubbing the grains. The raw rice is aged for at least a year in silos at a controlled temperature of less than 15° to allow the starch to stabilize and ensure that it is less dispersed during cooking and that each individual grain increases the absorption capacity of the condiments. The bud, which is the vital part of the rice, is separated from the grain during processing, and reintegrated thanks to a patented process in Watercolor. <p>Riso Baldo Margherita is a rice of great quality, thanks to its <strong>second-degree stone processing:</strong> we impart a slow and delicate process to the raw rice we produce - on about 300 cultivated hectares stone with traditional machines such as "Hamburg" Minghetti, able to keep the grains intact, to the point that you will find many including their gem. The result is an amber colored rice which retains its nutritional properties with great resistance to cooking and flavour. A recent variety with crystalline and consistent grains with great absorption capacity. <p>The Moscato d'Asti DOCG "Erianthe" maintains the surprising set of unmistakable aromas provided by the grapes from which it comes. Thanks to the low alcohol content, this delicious, lively wine is extremely easy to drink and particularly pleasant as a summer refreshment. In the process the bunches are selected by hand on the vibrating sorting table and cooled with carbonated snow to avoid oxidation and considerably reduce the use of sulphites. Subsequently, these are subjected to soft pressing. The entire process takes place without the use of augers in order to treat the grapes in the most delicate way possible. Fermentation takes place in stainless steel tanks at a controlled and interrupted temperature to maintain the sugars and natural aromas of the grapes. The second fermentation in an autoclave allows the wine to become pleasantly lively. On the nose it is unmistakable, fragrant like no other wine, with varietal aromas typical of Moscato grapes, hints of roses, geraniums, citrus fruits and sage. On the palate fresh, elegant and well balanced in sweetness and acidity, soft with a pleasant long fruity and mineral finish.
