20 delicate steps are required to get watercolor rice, starting from the propeller, still today considered the best method to whiten rice by rubbing the grains. The raw rice is aged for at least a year in silos at a controlled temperature of less than 15° to allow the starch to stabilize and ensure that it is less dispersed during cooking and that each individual grain increases the absorption capacity of the condiments. The bud, which is the vital part of the rice, is separated from the grain during processing, and reintegrated thanks to a patented process in Watercolor. All this to combine the taste of white rice with the nutritional elements of brown rice.
