<p>Roveja is a legume similar to a pea, with a colored seed that goes from green to brown. In past centuries it was grown on the Apennine ridge, especially on the Sibillini Mountains. It is resistant to low temperatures, needs little water and is grown in spring - summer. Together with lentils, grass peas and broad beans, it was the protagonist of the diet of shepherds and farmers. It can be eaten fresh or dried, in this case it is excellent for preparing soups.</p>
