Cannellini beans are easily recognizable by their color (glossy white) and shape (cylindrical). They are widely used in Italian gastronomy for the preparation of soups and cold dishes. As for the Borlotti beans, soaking for about 12 hours and cooking for at least 45 minutes is required.
