Champagne Blanc de Blancs Grand Billecart-Salmon

The Grand Cru Blanc de Blancs of the Maison Billecart Salmon is a non-vintage Champagne Brut, which comes exclusively from a rigorous selection of the best Chardonnay grapes from prestigious parcels located within the territory of four legendary Grand Cru: Côte des Blancs: Avize, Chouilly, Cramant, Mesnil-sur-Oger.

• Procedure: At the end of the manual harvest, the bunches they are pressed very softly and the flower must ferments in temperature-controlled vats with vinifications carried out separately for each single parcel. The base wines rest for a few months, partially carrying out the malolactic fermentation, before being assembled for the creation of the final cuvée, with the addition of a percentage that varies from 33 to 40% of reserve wines from previous years, which help to give richness and maturity to the wine. The second fermentation takes place in the bottle according to the Champenoise Method, with a period of rest on the lees for 6-8 years in the Maison's caves. Made with 100% Chardonnay grapes harvested from the renowned Côte des Blancs, the aging on the lees continues for 48-60 months.
