Split broad beans (without integuments) are kidney-shaped and creamy-yellow legumes, obtained from whole broad beans. Typical of dried beans or lentils: they are in fact dipped directly into boiling water, or cooked with steam. The end result is a sort of purée, an excellent accompaniment for vegetables with a bitter aftertaste. Furthermore, broad beans are the least caloric legume ever and, like beans and lentils, they acquired a leading role in ancient times as the food of the poor par excellence, given their low cost and simple availability.
