Purgatory beans are characterized by a very thin skin and require only 2 hours of soaking and 1 hour of cooking. These beans are widely used in the preparation of soups, in soups (the classic pasta and beans) with the ritual addition of locally produced raw extra virgin olive oil. However, it is also used in stewed preparations, to accompany meat stews or as a side dish in fish dishes.

RECOMMENDED PAIRINGS: Purgatory beans are excellent simply stewed, with tomato sauce or combined to make delicious soups. Also delicious for cold dishes and summer salads.
