Cicerchia, also known as "cecere", in the past was a very common legume in various areas of Umbria. The grass peas selected by us are grown in Colfiorito, they have a unique and characteristic appearance, they are in fact flattened and rectangular and their flavor is a mix between the taste of chickpeas and broad beans. Cicerchie can be used to prepare soups and bruschetta but also haute cuisine dishes.
