One of the secrets of these spaghetti is precisely the natural drying of the pasta which takes place at a temperature of 33-36°C for 50 hours, in this way the proteins in the pasta and gluten are not burned by high temperatures and make the pasta tastier and more fragrant. All processes are marked by slow procedures, at low temperatures: an approach abandoned by the industry due to long waits and lower yields, but which is necessary to enhance the flavor of the grain, the absorption of the sauce and increase the digestibility of the pasta .
