Coglioni di Mulo, the salami with the most particular name, the shape explains its denomination. It is obtained by finely grinding the pork shoulder and the underlying part. The salami is enriched with natural seasonings, such as salt, pepper and garlic, a square section lard is added in the centre. Rigorously stuffed into natural casings, it is slightly softer than other cured meats, aged for 70/90 days, starting from the cellar with a wood-burning fireplace.
