The Cinta Senese is an ancient rustic breed of prized pigs, which takes its name from its area of origin, the hills of the Sienese territory.
The Pancetta di Cinta Senese is trimmed and put in salt with a characteristic tanning for about a week. It is then washed, dried and left to mature until it reaches its typical flavor and consistency.
