The term "buzzonaglia di tuna" indicates the part of the fillet that is close to the central bone, the backbone of the fish. It has an intense flavor and a dark color and is appreciated above all for its softness, with a dark red, almost black colour, ideal as a cold main course, combined with salads, boiled potatoes and side dishes in general.
